Farm to Table® Experience

When you enroll at Escoffier in Boulder, you can complete a six-week experience that lets you explore the production processes behind the ingredients you use. Concepts learned from the Farm to Table® Experience can help you appreciate the science, art and craft behind everything from the herbs you use as garnish to the meat and dairy that take a starring role in your dishes.

Fruit, vegetables, herbs and grains

Get your hands dirty as you explore sustainable and organic methods for growing produce, including newer methods such as hydroponic farming and hoop houses.

Dairy

Milk, eggs, butter and cheese

Gather eggs from chickens and milk cows and goats to produce cheeses, butter, cream and other dairy products.

Livestock

Beef, pork, lamb, poultry, bison and buffalo

Explore safe, humane farming processes for poultry, cows and pigs, as well as less common livestock animals such as buffalo and bison.

Artisanal Products

Honey, coffee, wine, beer and more

Learn about brewing, winemaking, beekeeping, charcuterie, coffee roasting and much more.

During the Farm to Table® Experience, you can:

  • Focus on what Farm to Table means and understand how food is sourced and grown sustainably.
  • Develop your knowledge of where our food comes from and how to make better choices in sourcing and purchasing.
  • Take lab classes that can demonstrate techniques for helping you explore and expand your palate.
  • Spend time visiting working farms, meeting the farmers and experiencing first-hand the rewards and challenges of operating a farm (weather permitting).
  • Experience whole-animal butchery and apply lessons on how to prepare different cuts.
  • Collaborate with your fellow students to put on a culmination event where you can work to determine a budget, establish menus, and write out recipes that reflect what you’ve learned during the experience.
